Tofu Eggless Salad

For those days when you come home and there’s nothing prepared in the fridge, but you still want to have something light, delicious, and healthy of course, this is your go-to recipe. Loaded with fresh ingredients, protein and even vitamin B12. You’re in luck!

A tofu eggless salad is a mix of uncooked ingredients, where you crumble the tofu, in replacement of eggs, and let the veggies and spices blend together and work their magic.

For this recipe I included two specific ingredients to amp up the nutritional value. So you are eating a delicious but nutritious meal.

One of them is turmeric, which will lightly tint the tofu in a yellow, egg-like color, making it look very appealing. It will also add some of its glorious properties to the dish, such as anti-inflammatory, anti-aging, anti-cancer and detoxifying properties. Turmeric also helps reduce bad cholesterol and increase good cholesterol, oh yeah.

The other special ingredient is nutritional yeast. Yeah, I know the name sounds weird, and it may sound like it couldn’t possibly contribute to a tasty meal, but despite the funky name, nutritional yeast is an excellent source of protein, containing essential amino acids; it’s low in sodium and full of vitamins, most importantly vitamin B12 – an essential vitamin for brain function – score!

Trust me, you’ll want to pick some up and use it in your recipes. You’ll probably love it too.

Nutritional yeast or “savory yeast flakes”, as our Aussie friends call it, is yellow and flaky. Its flavor will remind you of parmesan cheese, and it’s texture is nutty and creamy. It is also the only vegetarian food source of vitamin B12, so if you’re veg*an, it’s a good idea to add some to your food regularly.

How to use nutritional yeast:

  • Use it as you would parmesan cheese, sprinkled over any pasta dish or salad
  • Sprinkled over popcorn and pizza
  • Stir it into mashed potatoes or sweet potatoes
  • Cook it with polenta or grits
  • Add it to gravies

Tofu Eggless Salad
Serves 6
Preparation: 15 minutes

  • 2 blocks extra-firm tofu
  • 1 cup vegan mayonnaise
  • ¼ cup onion, finely chopped
  • ½ cup celery, chopped
  • ½ cup parsley, finely chopped
  • 1 cup carrot, grated
  • ¼ cup nutritional yeast
  • 1 tablespoon dijon mustard
  • ½ teaspoon turmeric
  • salt and pepper

In a large bowl crumble both blocks of tofu. Mix in the remaining ingredients until thoroughly combined. Serve over toast gluten-free or sprouted bread.

This dish will keep in an airtight container for 5 days. It is an excellent lunch option to take to work or prepare at home as a quick casual dish.
