Avocado Spread

Eating healthy doesn’t mean eating boring, tasteless food; nor does it mean spending countless hours in the kitchen.

Today, I ran a few errands that took me longer than I expected. When I got back home, it was passed my normal lunch hour and I was starving!

On top of that, my fridge was almost empty, since I was out of town for a whole week – more on that story to come. So I had to get creative with what I had in the kitchen.

I could’ve opened the pantry and gone for the quickest fix – a bowl of cereal or some tortilla chips. Instead, I toasted a slice of gluten-free bread and made this quick avocado spread to put on top. It took me only 5 minutes to prepare and the best part was that it stopped the rumbling and grumbling of my stomach.

Avocado Spread
Serves 2
Preparation time: 5 minutes

2 ripe avocados
¼ cup cilantro
¼ cup onion
1 clove garlic
1 tablespoon lime juice
1 teaspoon chipotle sauce (optional)

Finely chop the cilantro, onions and garlic. In a medium bowl, mash the avocados until they become soft like butter. Mix in the chopped ingredients and lime juice. Season with salt. If you feel adventurous, add one chopped serrano pepper or one teaspoon of chipotle sauce.

I added a slice of tomato and cucumber over the avocado spread. It could’ve been lettuce or bell pepper or any other veggie, but those were the ones I had in my fridge.

I am known for modifying recipes to adjust to what’s available in the kitchen. It makes life easier and stress-free. Feel free to do the same.
