Peanut Butter Cups

Halloween is just a few days away! I don’t know about you but this is one of my favorite holidays. I always have a ton of fun dressing up, hanging out with friends and, let’s admit it, enjoying the sweets and treats!

Not all treats need to be commercially processed, though, which is why I am bringing you a healthy alternative – homemade peanut butter cups!

I always think of peanut butter cups as one of America’s signature candy, and I was thrilled to find out that you can make them at home. Homemade peanut butter cups are the real deal – adios reese’s!

This recipe is ridiculously easy to make, and believe it or not, healthy. Yes, that’s right, healthy. Here’s why:

In its natural state (without added sugar or dairy products), raw cacao is considered a superfood for vitality and health. It is loaded with antioxidants, magnesium and essential fatty acids. Cacao (not the roasted, processed cousin known as cocoa) is one of the most nutrient rich and complex foods. It is actually considered by some experts as the #1 antioxidant food and the #1 source of magnesium. Isn’t that amazing? Check out some of the benefits of unprocessed, raw cacao:

All chocolate is made from cacao in its natural, unadulterated state. Unfortunately, once it’s processed, refined and ingredients such as white sugar and milk are introduced, all its amazing nutrients are diluted to nothing. That’s why chocolate has earned it’s reputation as junk food.

But there’s good news! We can prepare our own chocolate bars, drinks and candy with the pure ingredient of raw cacao. So without further adieu, here’s a tasty recipe for you to try:

Peanut Butter Cups
20 pieces
Preparation time: 30 minutes

½ cup coconut oil
5 tablespoons raw cacao powder
3 tablespoons raw honey
1 teaspoon vanilla extract
peanut or almond butter
½ banana

For this recipe, the consistency of the coconut oil needs to be soft but not liquid. Once you start whisking the coconut oil with the rest of the ingredients it will soften to perfection. However, if your coconut oil it’s still too hard, you can soften it in a bain-marie to avoid killing its enzymes.

In a medium bowl, whisk coconut oil and raw cacao powder. Add raw honey and vanilla extract, and mix well. Place 12 mini cupcake liners in a baking pan, and put about 1 teaspoon of chocolate in the bottom of each.

Place in the freezer to set for about 10-15 minutes, or until hard. Next, put about 1 teaspoon of peanut butter (or your prefered nut butter). Add a slice of banana and cover the cups with a last layer of chocolate. Freeze for another 10 minutes.

You can serve with or without the liner. Keep the rest in the fridge. Enjoy this deliciously healthy treat!

    This sounds wonderful, Cinthia. I’ve been off Reese’s peanut butter cups since I saw that they’re made with corn syrup. These look wonderful and not sugar filled. Another plus. Thanks. Can I get the raw cacao powder everywhere?

      Hi Robin,
      You can find it at Whole Foods for sure. As far as the nut butter, you could also add other types. I had some with crunchy almond butter and it added a nice crisp texture. Something to try :-)
